We start with the famous cold crabs. This is a Teochew delicacy and not readily available anywhere. The secret to a good cold crab is that you need to have a good source of crabs. Not any crab will do. No you want a crab that is just about to molt, then it is full of Gor (Milt). For many years I was under the impression that Gor was the egg of the female crab until I found out that in order to have Gor, you need to have a male crab! (I later found out that Milt is actually Semen and Seminal Fluids - hope that doesn't put you off. Hey you eat roe what, what's wrong with the male equivalent?)
